Chef De Partie - Lough Rea Hotel & Spa

Lough Rea Hotel & Spa are currently recruiting for a Chef de Partie to join the team.

The Hotel

Lough Rea Hotel & Spa is located 20 minutes from Galway city centre and 5 minutes from the N6. The hotel comprises of 91 bedrooms. Lir Bar & Brasserie is the hub of the hotel: from early morning barista coffee to late evening cocktails. Food is served throughout the day. Abbey Restaurant is open at weekends for elegant dining.

The Role

The ideal candidate will have previous Chef de Partie experience. They will be a team player, work well under pressure and have HACCP knowledge. They will have the ability to deal with large corporate and leisure groups, and demonstrate a flexible attitude to work. 
Considering the nature of this role and our industry, shifts and weekend work will form part of this role. 

Day to day duties will include:

  • To prepare all ingredients for service for allocated section to the required standard, ensuring no wastage 
  • To cook food to the required specifications 
  • To ensure the smooth running of food service with restaurant personnel 
  • To ensure all special requests made by guests are met
  • To work in an organised, hygienic manner at all times ensuring the HACCP regulations are adhered to 
  • To receive goods from suppliers, when required, and to ensure products conform with HACCP specifications 
  • To ensure all goods are stored correctly and hygienically in accordance with HACCP specifications 
  • To ensure correct rotation of stock as per HACCP requirements 
  • To adhere to cleaning schedules set out for the Kitchen
